Daniel Ortega is a lifelong coffee producer in La Muralla just outside of San Agustin. His farm sits at 1850 MASL where he grows pink bourbon and tabi. He was one of the first to dedicate his life to coffee production in the area as well as the first to grow Caturra. Now at the age of 69, he brings his entire life's work of knowledge into his coffee.

After years of growing Cautrra, his plants started to suffer from roya. He replanted his entire farm 5 years ago to Pink Bourbon and Tabi. This is our third season working with Daniel's coffee. We are finding lovely flavors of licorice and pomegranate with a jammy sweetness. 

 

Processing Details:

Cherries are collected every 15 days, followed by a 24-hour cherry ferment in the hopper above the de-pulper. The following morning, the cherries are de-pulped and then left to dry ferment for another 22 hours. The seeds are then rinsed and the coffee is moved to a raised solar drying bed where the coffee is dried within 15 days.
